If you’re looking for a unique experience that fuses the refined art of pastry with an elegant design inspired by three key elements, be sure to visit the distinguished restaurant Sablée on Calle Loíza. From the very beginning, the owners envisioned a space that would reflect an atmosphere of sophisticated lunches and afternoon tea, opting for dark tones instead of traditional light colors.
The name Sablée evokes a delicate yet crumbly dough used in classic recipes like apple tarts or quiche, setting the tone for the place—one that transports you to another era, seamlessly blending with its menu.

The design inspiration comes from three sources that served as the muse for the design team at Fernando Rodríguez Studio: the historic Madrid chocolatier that has endured since 1914, the understated elegance of Parisian brasseries, and most notably, a painting by Giovanni Boldini—Gertrude Elizabeth, Lady Colin Campbell (1897). With its meticulous attention to detail in the black satin, this piece became the primary inspiration for creating a space that reflects the elegance of the Gilded Age in Paris.
The final result is an intimate restaurant that transports you to another era, where every corner invites you into a warm and immersive experience. Velvet fabrics, dark floral patterns, fringed lamps, and exotic feathers create a romantic atmosphere. The black-and-white marble bar, arched window-like structures, and penny tile flooring in monochrome reinforce the Parisian touch. Custom-made furniture, crafted by local cabinetmakers and upholsterers, blends rich textures and deep hues, inspired by a floral velvet fabric that gives the space its distinctive character.
Named after a delicate pastry dough, Sablée transports its guests to a bygone era, incorporating design elements inspired by the historic Madrid chocolatier, Parisian brasseries, and the artwork of Giovanni Boldini. Its intimate setting, adorned with velvet fabrics and custom-made furniture, creates a romantic ambiance that invites a full sensory experience, blending history, elegance, and design.
Fernando Rodríguez and his team have completed multiple projects around the world. His work has also received international recognition in magazines such as Harper’s Bazaar Spain, Architectural Digest Spain, Vogue Spain, The World of Interiors, House Beautiful, and Condé Nast Traveler.
